Instructions
Preheat your oven to 375°F (190°C).
Take the chicken breasts and butterfly them by slicing them horizontally but not all the way through. Open them like a book.
Season both sides of the chicken with salt, pepper, and Italian seasoning.
On one side of each chicken breast, place some roasted red peppers, a handful of spinach, and a good amount of mozzarella cheese.
Fold the chicken over the stuffing and secure it with toothpicks.
Heat olive oil in a large oven-proof skillet over medium-high heat. Sear the chicken on both sides until golden, about 3-4 minutes for each side.
Transfer the skillet to your oven and bake for about 20 minutes, or until the chicken is cooked through.
Remove the toothpicks and serve hot.
Notes
This stuffed chicken is delightful on its own, but you can serve it with a side of rice or a fresh salad for a complete meal. Drizzling a little balsamic glaze on top can also add a nice touch!
