Equipment

  • Oven-proof Skillet
  • Toothpicks

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts

Seasoning

  • Salt and pepper to taste

Filling

  • 1 cup roasted red peppers, sliced
  • 1 cup fresh spinach leaves
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil

Instructions

  • Preheat your oven to 375°F (190°C).
  • Take the chicken breasts and butterfly them by slicing them horizontally but not all the way through. Open them like a book.
  • Season both sides of the chicken with salt, pepper, and Italian seasoning.
  • On one side of each chicken breast, place some roasted red peppers, a handful of spinach, and a good amount of mozzarella cheese.
  • Fold the chicken over the stuffing and secure it with toothpicks.
  • Heat olive oil in a large oven-proof skillet over medium-high heat. Sear the chicken on both sides until golden, about 3-4 minutes for each side.
  • Transfer the skillet to your oven and bake for about 20 minutes, or until the chicken is cooked through.
  • Remove the toothpicks and serve hot.

Notes

This stuffed chicken is delightful on its own, but you can serve it with a side of rice or a fresh salad for a complete meal. Drizzling a little balsamic glaze on top can also add a nice touch!
