Instructions
Prepare the cucumbers by peeling and chopping them into rough chunks for easier blending.
In a blender, combine the chopped cucumbers, lemon juice, sugar, and water. Blend on high speed until smooth.
If desired, strain the mixture through a fine mesh sieve into a pitcher to remove pulp.
Add ice cubes to the pitcher or individual glasses. Refrigerate for about 30 minutes for extra chill if desired.
Serve in glasses, garnished with lemon slices and fresh mint leaves on top.
Notes
Adjust sweetness with honey or agave syrup for a healthier option. Add sparkling water for a fizzy twist.
