  • 2 cups mashed potatoes
  • 1 cup corn kernels fresh or frozen
  • 1/4 cup green onions finely chopped
  • 1/4 cup cilantro chopped
  • 1/2 cup breadcrumbs
  • 1 large egg beaten
  • to taste salt

  • 2 tablespoons vegetable oil for frying
  • 1 cup Greek yoghurt
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • to taste salt
  • to taste pepper

Instructions

  • In a large bowl, combine the mashed potatoes, corn kernels, green onions, cilantro, breadcrumbs, and beaten egg. Season with salt and pepper, and mix until well combined.
  • Form the mixture into small, flat patties.
  • Heat the vegetable oil in a non-stick skillet over medium heat.
  • Fry the patties for about 4-5 minutes on each side, or until they are golden brown and crispy.
  • In a small bowl, mix together the Greek yoghurt, minced garlic, lemon juice, salt, and pepper to make the garlic yoghurt dip.
  • Serve the warm patties with the garlic yoghurt dip on the side.

Notes

Make sure your mashed potatoes are well-seasoned for the best flavor. You can prepare the mixture ahead of time and store it in the fridge, then shape and fry the patties when you’re ready to eat.
