Instructions
In a large bowl, combine the mashed potatoes, corn kernels, green onions, cilantro, breadcrumbs, and beaten egg. Season with salt and pepper, and mix until well combined.
Form the mixture into small, flat patties.
Heat the vegetable oil in a non-stick skillet over medium heat.
Fry the patties for about 4-5 minutes on each side, or until they are golden brown and crispy.
In a small bowl, mix together the Greek yoghurt, minced garlic, lemon juice, salt, and pepper to make the garlic yoghurt dip.
Serve the warm patties with the garlic yoghurt dip on the side.
Notes
Make sure your mashed potatoes are well-seasoned for the best flavor. You can prepare the mixture ahead of time and store it in the fridge, then shape and fry the patties when you’re ready to eat.
