  • 1 cup Crushed pineapple, well drained
  • 1/4 cup Butter, softened
  • 1 cup Powdered sugar
  • 2 cups Shredded coconut, divided
  • 1/2 teaspoon Vanilla extract

Instructions

  • In a mixing bowl, combine the crushed pineapple, softened butter, powdered sugar, 1 cup of shredded coconut, and vanilla extract. Mix until everything is well combined and smooth.
  • Cover the mixture and chill in the refrigerator for about 1 hour to firm it up.
  • Once chilled, take out the mixture and shape it into small balls.
  • Roll each ball in the remaining cup of shredded coconut to give them a nice coating.
  • Place the coated balls on a baking sheet and chill again in the refrigerator for about 30 minutes until they are firm.
  • Store your yummy treats in an airtight container in the refrigerator and serve them chilled!

Notes

Make sure to drain the crushed pineapple well. You can use a cookie scoop to make even-sized balls. Let the kids help with rolling the balls in coconut; it’s a fun activity for the whole family!
