Instructions
In a mixing bowl, combine the crushed pineapple, softened butter, powdered sugar, 1 cup of shredded coconut, and vanilla extract. Mix until everything is well combined and smooth.
Cover the mixture and chill in the refrigerator for about 1 hour to firm it up.
Once chilled, take out the mixture and shape it into small balls.
Roll each ball in the remaining cup of shredded coconut to give them a nice coating.
Place the coated balls on a baking sheet and chill again in the refrigerator for about 30 minutes until they are firm.
