  • 12 oz Light cream cheese, softened 1-1/2 packages
  • 1 small can Crushed pineapple Well drained
  • 2-3 TBS Powdered sugar Adjust to taste for sweetness
  • 2 TBS Green onion, finely chopped
  • 2-3 TBS Chopped ham Optional, small dice if using
  • 1 cup Chopped pecans Finely chopped for coating

Instructions

  • Prepare your workspace: Place the softened cream cheese in a medium mixing bowl. Make sure the cream cheese is soft so it mixes smoothly — leave it at room temperature for 20–30 minutes if necessary.
  • Drain the pineapple: Open the can of crushed pineapple and press through a sieve or use paper towels to remove as much juice as possible. Excess liquid will make the cheese ball too soft.
  • Mix the base: Add the drained crushed pineapple to the bowl with the cream cheese. Add 2–3 tablespoons powdered sugar (start with 2 and taste), and 2 tablespoons finely chopped green onion.
  • Add optional ham: If you’d like a savory kick, fold in 2–3 tablespoons chopped ham. Mix gently but thoroughly until ingredients are evenly combined and the mixture is smooth.
  • Shape the ball: Using a spatula or clean hands, form the mixture into a compact ball. A plastic wrap or parchment technique helps — scoop the mixture onto plastic wrap and wrap tightly, shaping into a smooth ball.
  • Chill to set: Place the wrapped ball in the refrigerator for at least 1 hour to firm up. Chilling helps the flavors meld and makes rolling in nuts easier.
  • Prepare the pecans: While chilling, finely chop about 1 cup of pecans. Spread them on a plate or shallow bowl.
  • Coat the cheese ball: Unwrap the chilled ball and roll it in the chopped pecans, pressing gently so the nuts adhere evenly. Return to a serving plate.
  • Serve: Refrigerate until ready to serve. Offer crackers, sliced baguette, or fresh veggies for dipping.
