Ingredients

Filling Ingredients

  • 2 large apples, peeled and diced
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Dough Ingredients

  • 1 package refrigerated pie crusts (2 crusts)
  • 1 egg beaten (for brushing)
  • 2 tablespoons granulated sugar (for sprinkling)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium saucepan, combine the diced apples, granulated sugar, cinnamon, lemon juice, and cornstarch. Cook over medium heat, stirring frequently, until the apples soften and the mixture thickens, about 5-7 minutes. Remove from heat and let it cool.
  • Roll out the refrigerated pie crusts on a floured surface. Use a round cookie cutter or a glass to cut out circles from the dough.
  • Spoon a small amount of the apple filling onto half of the dough circles.
  • Place another dough circle on top of each filled circle, pressing the edges together with a fork to seal.
  • Brush the tops of the cookies with the beaten egg and sprinkle with granulated sugar.
  • Bake for 15-18 minutes, or until they turn golden brown.
  • Let the apple pie cookies cool slightly before serving.

Notes

Serve these cookies warm with a scoop of vanilla ice cream for an extra tasty treat. They are also wonderful with a cup of coffee or tea!
