1packagerefrigerated pie crusts (2 crusts)

Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium saucepan, combine the diced apples, granulated sugar, cinnamon, lemon juice, and cornstarch. Cook over medium heat, stirring frequently, until the apples soften and the mixture thickens, about 5-7 minutes. Remove from heat and let it cool.
Roll out the refrigerated pie crusts on a floured surface. Use a round cookie cutter or a glass to cut out circles from the dough.
Spoon a small amount of the apple filling onto half of the dough circles.
Place another dough circle on top of each filled circle, pressing the edges together with a fork to seal.
Brush the tops of the cookies with the beaten egg and sprinkle with granulated sugar.
Bake for 15-18 minutes, or until they turn golden brown.
Let the apple pie cookies cool slightly before serving.
