Ingredients

Crust Ingredients

  • 3 cups All-purpose flour
  • 1/2 cup White sugar
  • 1/2 teaspoon Salt
  • 1 cup Margarine, cold, cut into pieces For the crust

Filling Ingredients

  • 4 large Eggs Room temperature
  • 1 1/2 cups Light corn syrup
  • 1 1/2 cups White sugar
  • 3 tablespoons Margarine, melted For the filling
  • 1 1/2 teaspoons Vanilla extract
  • 2 1/2 cups Chopped pecans Toasted lightly if desired

Instructions

  • Step 1: Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 10x15 inch jellyroll pan.
  • Step 2: In a large bowl, stir together flour, sugar, and salt. Cut in cold margarine until the mixture resembles coarse crumbs. Press the mixture evenly into the prepared pan.
  • Step 3: Bake the crust for about 20 minutes until set and just beginning to turn golden on the edges.
  • Step 4: While the crust bakes, whisk together eggs, corn syrup, sugar, melted margarine, and vanilla extract. Stir in chopped pecans until well combined.
  • Step 5: Spread the pecan filling evenly over the hot crust and return to the oven. Bake for about 25 minutes until the filling is set.
  • Step 6: Allow the pan to cool completely on a wire rack before cutting into bars or squares.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Can be frozen for up to 3 months.
