  • 1 cup Creamy Peanut Butter
  • 1/2 cup Granulated Sugar
  • 1/2 cup Packed Light Brown Sugar
  • 1 large Egg
  • 1 tsp Pure Vanilla Extract
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 cup Semi-Sweet Chocolate Chips, melted
  • 1 cup Marshmallow Fluff

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix peanut butter, granulated sugar, brown sugar, egg, vanilla, baking soda, and salt until smooth.
  • Scoop tablespoon-sized portions and roll into balls. Place on baking sheet, spacing 2 inches apart. Flatten gently with a fork in a crisscross pattern.
  • Bake for 8–10 minutes until edges are just golden. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
  • Spread melted chocolate and a dollop of marshmallow fluff on the bottom of one cookie. Top with another to make a sandwich. Repeat with remaining cookies.
  • Let cookies rest for 10 minutes to allow chocolate to set. Optional: use a kitchen torch to lightly toast the marshmallow.

Notes

Use crunchy peanut butter for added texture. Store in an airtight container for up to a week or freeze for up to 3 months. Let frozen cookies thaw at room temperature. Stir natural peanut butter thoroughly if using. For a gluten-free version, use certified GF peanut butter and ingredients.
