Instructions
Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or lightly grease them.
In a large bowl, use an electric mixer to cream together the peanut butter, softened butter, granulated sugar, and light brown sugar until the mixture is light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the creamed mixture, mixing until just combined.
Roll the dough into 1-inch balls and place them on the prepared baking sheets, spaced about 2 inches apart. Gently flatten each ball with the bottom of a glass that has been dipped in sugar.
Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are golden brown.
Immediately after removing the cookies from the oven, press a chocolate kiss into the center of each cookie, creating the paw print shape.
