1cupcreamy peanut butterroom temperature
1cupbrown sugarpacked
1/4cupgranulated sugar
2largeeggsroom temperature
1teaspoonvanilla extract
1 1/2cupsall-purpose flour
1teaspoonbaking powder
1/4teaspoonsalt
1cupbutterscotch chips
1/2cupchocolate chipsoptional
Instructions
Preheat oven to 350°F (175°C). Grease or line a 9x9-inch baking pan with parchment paper for easy removal.
In a large bowl, combine the melted butter and peanut butter until smooth and fully blended.
Stir in the brown sugar and granulated sugar until combined and slightly glossy.
Add the eggs, one at a time if you prefer, mixing until fully incorporated. Stir in the vanilla extract.
In another bowl, whisk together the all-purpose flour, baking powder, and salt to evenly distribute the leavening.
Gradually add the dry mixture to the wet ingredients, stirring gently until just combined — do not overmix.
Fold in the butterscotch chips and chocolate chips, if using, so they’re evenly distributed throughout the batter.
Spread the batter evenly in the prepared 9x9-inch pan, smoothing the top with a spatula.
Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs attached.
Let the bars cool completely in the pan before lifting them out using the parchment paper and slicing into squares. Serve and enjoy!
Notes
Store cooled bars in an airtight container in the refrigerator for up to 4–5 days. For longer storage, wrap bars individually and freeze for up to 3 months.
