Ingredients

Potatoes

  • 2 pounds potatoes, peeled and cut into 1-inch cubes
  • 4 tablespoons olive oil, divided
  • Salt and pepper to taste
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sugar
  • Fresh parsley, chopped for garnish

Instructions

  • Preheat your oven to 425°F (220°C).
  • Toss the potato cubes with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until crispy and golden. Turn them halfway through for even cooking.
  • While the potatoes are roasting, heat the remaining 2 tablespoons of olive oil in a skillet over medium heat. Add the onion and garlic, cooking for about 5 minutes until soft and translucent.
  • Stir in the smoked paprika and cayenne pepper, cooking for another minute to release the flavors.
  • Add the diced tomatoes, red wine vinegar, and sugar to the skillet. Let this simmer for 15-20 minutes until it thickens slightly. Season with salt and pepper to taste.
  • To serve, place the roasted potatoes on a serving dish and pour the spicy tomato sauce over the top. Garnish with chopped parsley.

Notes

Make sure to cut the potatoes into even sizes for even cooking. Don’t skip the turning step while roasting. It helps to get all sides crispy. Feel free to adjust the spice levels to suit your taste!
