  • 1 whole Onion, halved and cut into quarters
  • 1/2 cup Canola oil
  • 1/2 cup Olive oil
  • 4 cloves Garlic, chopped
  • 1 envelope Onion soup mix

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the sliced potatoes and onion quarters.
  • In another bowl, mix the canola oil, olive oil, garlic, and onion soup mix.
  • Pour the oil mixture over the potatoes and onions, tossing to coat evenly.
  • Spread the mixture on a baking sheet in a single layer.
  • Bake for about 45 minutes or until the potatoes are golden brown and tender, stirring halfway through.
  • Serve hot.

Notes

For extra flavor, try adding your favorite herbs like rosemary or thyme. Make sure to cut the potatoes evenly so they cook at the same time. Stir the potatoes halfway through cooking for even browning.
