Instructions
Heat olive oil in a large skillet over medium heat. Add cubed chicken, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through.
Stir in the rice until coated with the chicken flavors. Pour in chicken broth and add the mixed vegetables. Stir to combine.
Bring the mixture to a gentle boil. Reduce heat to low, cover with a lid, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
Drizzle honey BBQ sauce over the chicken and rice. Gently fold it in and cook for an additional 2-3 minutes.
