Ingredients

Chicken

  • 1 lb chicken thighs or breasts, cubed

Rice

  • 1 cup long-grain white rice, rinsed

Sauce

  • 1/2 cup honey BBQ sauce

Broth

  • 2 cups chicken broth

Vegetables

  • 1 cup mixed vegetables (bell peppers, corn, peas)

Oil

  • 1 tablespoon olive oil

Seasoning

  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium heat. Add cubed chicken, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through.
  • Stir in the rice until coated with the chicken flavors. Pour in chicken broth and add the mixed vegetables. Stir to combine.
  • Bring the mixture to a gentle boil. Reduce heat to low, cover with a lid, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
  • Drizzle honey BBQ sauce over the chicken and rice. Gently fold it in and cook for an additional 2-3 minutes.
  • Remove from heat, give it a final stir, and garnish with green onions or fresh herbs. Serve hot and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave.
