Ingredients

Main Ingredients

  • 1 lb steak (sirloin or flank), thinly sliced Use tender cuts for best flavor.
  • 8 oz pasta (penne or fusilli) Other pasta shapes like rigatoni or farfalle can also work.
  • 2 tbsp olive oil For sautéing the steak and vegetables.
  • 2 cloves garlic, minced Adds zesty flavor.
  • 1 large bell pepper, sliced Feel free to use different colors for sweetness.
  • 1 large onion, sliced For added depth of flavor.
  • 1 cup beef broth Can substitute with vegetable broth if needed.
  • 1 cup cherry tomatoes, halved Adds sweetness and color.
  • to taste salt and pepper For seasoning.
  • to garnish fresh parsley For a fresh herbal note.

Instructions

Preparation

  • In a large pot or deep skillet, heat olive oil over medium-high heat.
  • Add the thinly sliced steak and season with salt and pepper. Cook for 3-4 minutes until browned but not fully cooked through. Remove the steak from the pot and set aside.
  • In the same pot, add minced garlic, sliced onion, and bell pepper. Sauté for about 3-5 minutes until the vegetables soften and the garlic becomes fragrant.

Cooking

  • Pour in the beef broth, scraping the bottom of the pot to lift all the tasty browned bits.
  • Add the pasta and stir well to combine.
  • Bring the mixture to a boil, then reduce heat, cover, and let it simmer for about 10 minutes, stirring occasionally to prevent sticking.
  • After 10 minutes, add the halved cherry tomatoes and return the cooked steak to the pot. Stir to combine and cook uncovered for an additional 3-5 minutes, letting the flavors meld and the sauce thicken slightly.
  • Taste and adjust seasoning with more salt and pepper if needed.
  • Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of beef broth to keep the sauce loose. Can also freeze in portions for up to 2 months.
