Instructions
In a large pot or Dutch oven, heat a drizzle of olive oil over medium-high heat. Add chicken and season with salt and pepper. Cook until golden brown.
To the same pot, add pasta, marinara sauce, and 2 cups of water. Stir well to combine.
Bring to a boil, then reduce heat to low. Cover and simmer for 10–12 minutes until pasta is al dente.
Stir in mozzarella, Parmesan, and red pepper flakes (if using). Let cheese melt and sauce thicken, about 2–3 minutes.
Top with chopped fresh basil and serve hot.
Notes
Feel free to use different cheeses or swap in whole grain/gluten-free pasta. Keep an eye on the liquid—if the pasta absorbs too much, add a splash of water to loosen the sauce.
