Ingredients

Protein

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

Pasta

  • 1 pound pasta (penne, rotini, or ziti)

Sauce

  • 1 jar (24 ounces) marinara sauce

Cheese

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Herbs and Spices

  • 1/4 cup chopped fresh basil
  • 1/4 teaspoon red pepper flakes (optional)

Seasoning

  • Salt and pepper to taste

Instructions

  • In a large pot or Dutch oven, heat a drizzle of olive oil over medium-high heat. Add chicken and season with salt and pepper. Cook until golden brown.
  • To the same pot, add pasta, marinara sauce, and 2 cups of water. Stir well to combine.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 10–12 minutes until pasta is al dente.
  • Stir in mozzarella, Parmesan, and red pepper flakes (if using). Let cheese melt and sauce thicken, about 2–3 minutes.
  • Top with chopped fresh basil and serve hot.

Notes

Feel free to use different cheeses or swap in whole grain/gluten-free pasta. Keep an eye on the liquid—if the pasta absorbs too much, add a splash of water to loosen the sauce.
