  • 8 ounces rotini pasta cooked and drained
  • 1 cup cherry tomatoes halved
  • 1/2 cup black olives sliced
  • 1/2 cup green olives sliced
  • 1/4 cup red onion finely chopped
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions

  • In a large salad bowl, combine the cooked rotini, cherry tomatoes, black olives, green olives, red onion, feta cheese, and fresh parsley.
  • In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper.
  • Pour the dressing over the pasta mixture and toss well to coat everything evenly.
  • Refrigerate for at least 30 minutes to chill and let the flavors blend.
  • Serve chilled as a refreshing side dish or a light main course.
