Instructions
Preheat oven to 350°F (175°C).
In a saucepan, melt butter over medium heat.
In a bowl, whisk together sugar, flour, and cocoa powder.
Gradually add dry mixture to melted butter, stirring constantly.
Slowly pour in milk while continuously stirring to achieve a smooth consistency.
Cook for 5-7 minutes until thickened, then remove from heat.
In a separate bowl, whisk egg yolks. Add a bit of the hot chocolate mixture to temper them, then gradually mix yolks back into the saucepan.
Return saucepan to medium heat and cook for another 2-3 minutes, stirring. Stir in vanilla extract, then remove from heat.
Pour chocolate filling into the pre-baked pie crust and spread evenly.
In a clean bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.
Spread meringue over chocolate filling, sealing edges to prevent shrinking.
Bake for 10-12 minutes until meringue is golden brown.
Let pie cool completely before serving.
