  • 1/4 cup Butter
  • 1 cup Sugar
  • 1/4 cup Flour
  • 1/2 cup Cocoa powder
  • 2 cups Milk
  • 3 large Egg yolks
  • 1 tsp Vanilla extract
  • 3 large Egg whites
  • 1/4 tsp Cream of tartar
  • 1/2 cup Sugar (for meringue)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a saucepan, melt butter over medium heat.
  • In a bowl, whisk together sugar, flour, and cocoa powder.
  • Gradually add dry mixture to melted butter, stirring constantly.
  • Slowly pour in milk while continuously stirring to achieve a smooth consistency.
  • Cook for 5-7 minutes until thickened, then remove from heat.
  • In a separate bowl, whisk egg yolks. Add a bit of the hot chocolate mixture to temper them, then gradually mix yolks back into the saucepan.
  • Return saucepan to medium heat and cook for another 2-3 minutes, stirring. Stir in vanilla extract, then remove from heat.
  • Pour chocolate filling into the pre-baked pie crust and spread evenly.
  • In a clean bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.
  • Spread meringue over chocolate filling, sealing edges to prevent shrinking.
  • Bake for 10-12 minutes until meringue is golden brown.
  • Let pie cool completely before serving.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. Store in the fridge for up to 4 days or freeze for up to 3 months.
