  • 1/2 cup all-purpose flour
  • 1 cup self-rising cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder

Vegetables

  • 1/2 pound okra, coarsely chopped (about 2 cups)
  • 1 large green tomato, diced

Wet Ingredients

  • 1 large egg
  • 1/2 cup buttermilk
  • 1/3 cup vegetable oil (for frying)

Instructions

  • Prepare your veggies: Coarsely chop the okra, dice the green tomato, and finely dice half an onion. Set these aside.
  • In a large bowl, whisk together the all-purpose flour, self-rising cornmeal, salt, black pepper, and garlic powder.
  • Add the chopped okra, diced green tomato, and diced onion to the bowl. Toss well to coat the veggies evenly with the dry mixture.
  • In a separate small bowl, beat the egg and then stir in the buttermilk until well blended.
  • Pour the wet mixture over the dry, stirring gently until everything is just combined. Be careful not to overmix—the batter should be thick and just hold together.
  • Heat the vegetable oil in a heavy skillet (cast iron works best) over medium heat. Once the oil is shimmering but not smoking, drop heaping spoonfuls of the batter into the skillet. Flatten gently with the back of the spoon to form small patties.
  • Fry the fritters about 3-4 minutes per side, or until golden brown and crispy. Work in batches so you don’t overcrowd the skillet.
  • Transfer cooked fritters to a plate lined with paper towels to drain. Serve immediately for peak crispiness!

Notes

Leftover fritters can be stored in an airtight container in the refrigerator for up to 3 days. To keep them crispy, reheat in a hot skillet with a tiny splash of oil, or place them in a 400°F oven for 8-10 minutes until warmed through.
