  • 2 cups Rolled Oats Chopped in a blender to a finer texture
  • 1 teaspoon Baking Powder
  • 1 cup Milk Dairy or plant-based
  • 1 Carrot Grated
  • 9 Dried Apricots Rinsed with hot water and chopped
  • 4 tablespoons Raisins Rinsed with hot water
  • 1 Apple Grated

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a baking dish or use silicone baking parchment.
  • Prepare the oats by pulsing them in a blender or food processor until they reach a fine, flour-like texture.
  • Combine dry ingredients in a large mixing bowl. Stir together the finely chopped oats and baking powder.
  • Add the grated carrot and apple to the dry mix, folding gently to distribute the fresh ingredients evenly.
  • Rinse dried apricots and raisins with hot water to soften, then chop the apricots into small pieces. Add both fruits to the bowl.
  • Pour in the milk, stirring gently until all ingredients are well combined and the mixture is slightly thick but pourable.
  • Transfer the mixture into the prepared baking dish, spreading evenly with a spatula.
  • Bake for 35-40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  • Remove from oven and let cool slightly before serving. Enjoy warm!

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, warm individual portions in the microwave for about 30-45 seconds, or pop them in a preheated oven at 350°F (175°C) for about 10 minutes.
