Oatmeal, Apple, and Carrot Bake

Ingredients

Dry Ingredients

  • 2 cups Rolled Oats Chopped in a blender
  • 1 teaspoon Baking Powder

Wet Ingredients

  • 1 cup Milk Of your choice

Fruits and Vegetables

  • 1 Carrot Grated
  • 9 Dried Apricots Rinsed with hot water and chopped
  • 4 tablespoons Raisins Rinsed with hot water
  • 1 Apple Grated

Instructions

  • Step 1: Pulse the rolled oats in a blender just a few times to break them down without turning them into flour.
  • Step 2: In a large mixing bowl, combine the chopped oats with the baking powder.
  • Step 3: Grate the carrot and apple, then stir them into the dry mixture along with the chopped apricots and rinsed raisins.
  • Step 4: Pour the milk over the mixture and stir until well combined. The batter should be thick and scoopable.
  • Step 5: Pour the mixture into a greased or parchment-lined 8-inch baking dish. Smooth out the top and bake in a preheated oven at 350°F (175°C) for 30–35 minutes.
  • Step 6: Allow the bake to cool for at least 10 minutes, then slice into squares or bars and serve warm.

Notes

For extra sweetness, serve with honey or yogurt. This bake can be stored in the fridge for up to four days.
