Instructions
Preheat oven to 375°F (190°C) and grease a muffin pan.
Melt butter in a saucepan, add milk, and bring to a low boil.
Stir in flour all at once until a smooth dough forms and pulls from sides of the pan.
Remove from heat and let cool for 5 minutes.
Add eggs one at a time, mixing thoroughly until glossy and smooth.
Spoon into muffin cups, filling 2/3 full. Sprinkle sugar if desired.
Bake for 30 minutes or until golden and puffed.
Cool slightly and serve warm with honey, whipped cream, or fruit.
Notes
Add a splash of vanilla for flavor. Use almond milk for dairy-free version. Great with fruit, whipped cream, or jam.
