  • 2 cups sugar
  • 1 cup peanut butter
  • 1/2 cup unsalted butter 1 stick + 1 tablespoon, divided
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  • Pour oats into a large bowl. Line a baking sheet with parchment paper.
  • In a saucepan, melt 1 stick of butter over medium-high heat. Boil for 1 minute, then remove from heat.
  • Stir in peanut butter and vanilla until smooth.
  • Pour mixture over oats. Add sugar and milk, then stir until combined.
  • Scoop dough onto parchment-lined sheet, flattening slightly with a spoon.
  • Melt chocolate chips and 1 tablespoon butter in microwave-safe bowl in 20-second intervals until smooth.
  • Drizzle melted chocolate over cookies. Let sit at room temp or chill until chocolate sets.
  • Store in airtight container or serve immediately.

Notes

Use quick oats for ideal texture. Add-ins like chopped nuts or dried fruit are welcome. Store at room temp or in fridge for longer shelf life.
