Instructions
Pour oats into a large bowl. Line a baking sheet with parchment paper.
In a saucepan, melt 1 stick of butter over medium-high heat. Boil for 1 minute, then remove from heat.
Stir in peanut butter and vanilla until smooth.
Pour mixture over oats. Add sugar and milk, then stir until combined.
Scoop dough onto parchment-lined sheet, flattening slightly with a spoon.
Melt chocolate chips and 1 tablespoon butter in microwave-safe bowl in 20-second intervals until smooth.
Drizzle melted chocolate over cookies. Let sit at room temp or chill until chocolate sets.
Store in airtight container or serve immediately.
Notes
Use quick oats for ideal texture. Add-ins like chopped nuts or dried fruit are welcome. Store at room temp or in fridge for longer shelf life.
