  • 8 oz Cream Cheese, softened
  • 8 oz Whipped Topping
  • 14-16 oz Crushed Pineapple, drained
  • 3/4 cup Confectioner’s Sugar
  • 1/2 cup Pineapple Chunks (for topping)
  • 1/2 cup Shredded Coconut (for topping)
  • 1 1/2 cups Graham Cracker Crumbs
  • 1/3 cup Sugar
  • 1/2 cup Butter, melted

Instructions

  • In a medium bowl, combine graham cracker crumbs with sugar. Drizzle in melted butter and stir until evenly moistened.
  • Press the crumb mixture into the bottom of a 9x9-inch square pan to form the crust.
  • In a large mixing bowl, beat softened cream cheese with confectioner’s sugar until smooth and fluffy.
  • Gently fold in whipped topping until well combined.
  • Fold in the drained crushed pineapple until evenly distributed.
  • Spoon the pineapple cream filling over the prepared crust and smooth the top.
  • Sprinkle with pineapple chunks and shredded coconut.
  • Cover with plastic wrap and refrigerate for at least 2 hours to set.
  • Slice, serve, and enjoy!

Notes

Make sure to drain the pineapple well to avoid a soggy filling. This dessert can be made ahead of time and tastes even better the next day.
