Instructions
In a medium bowl, combine graham cracker crumbs with sugar. Drizzle in melted butter and stir until evenly moistened.
Press the crumb mixture into the bottom of a 9x9-inch square pan to form the crust.
In a large mixing bowl, beat softened cream cheese with confectioner’s sugar until smooth and fluffy.
Gently fold in whipped topping until well combined.
Fold in the drained crushed pineapple until evenly distributed.
Spoon the pineapple cream filling over the prepared crust and smooth the top.
Sprinkle with pineapple chunks and shredded coconut.
Cover with plastic wrap and refrigerate for at least 2 hours to set.
Slice, serve, and enjoy!
Notes
Make sure to drain the pineapple well to avoid a soggy filling. This dessert can be made ahead of time and tastes even better the next day.
