  • 1/2 cup Cottage Cheese Well-drained if extremely watery
  • 2 tbsp Cocoa Powder Unsweetened, sifted if lumpy
  • 1/4 cup Almond Flour Finely ground
  • 1 scoop Chocolate Protein Powder Your preferred brand
  • 2 tbsp Maple Syrup Room temperature
  • 1/4 cup Mini Chocolate Chips Plus extra for rolling if desired
  • 1 tbsp Peanut Butter Optional, smooth and at room temperature

Instructions

  • In a large mixing bowl, combine the cottage cheese, cocoa powder, almond flour, chocolate protein powder, maple syrup, and mini chocolate chips.
  • Stir the mixture until all ingredients are well combined. The cottage cheese should blend in nicely, leaving you with a brownie-like batter.
  • If desired, mix in the peanut butter for a nutty twist. Make sure it’s fully incorporated so the bites hold together.
  • Using your hands (or a small cookie scoop), roll the mixture into small bite-sized balls, about 1 inch in diameter.
  • Place the rolled balls on a plate or a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to set.
