Instructions
Grease a 9×9-inch pan or line it with parchment paper so the bars lift out easily.
In a medium saucepan over medium heat, melt the butter, stirring occasionally. Once melted, stir in the brown sugar and vanilla until smooth. Heat just until the sugar is integrated; do not boil.
Remove from heat and stir in the quick-cooking oats. Return to low heat for 2 to 3 minutes, stirring frequently.
Press half of the oat mixture firmly into the bottom of the prepared pan. Leave the remaining oat mixture in the bowl for the topping.
In a separate saucepan over low heat, melt the semisweet chocolate chips with the peanut butter. Stir frequently until glossy and smooth.
Pour the chocolate-peanut butter mixture over the pressed oat layer, spreading it evenly. Crumble the remaining oat mixture over the chocolate and press down gently.
Refrigerate for 2 to 3 hours, or until firm. Let sit at room temperature for 10 minutes before slicing into squares.

Store bars in an airtight container in the refrigerator for up to one week. Freeze for up to 3 months.
