1/2cuppacked brown sugar
1teaspoonvanilla extract
3cupsquick-cooking oats
1cupsemisweet chocolate chips
1/2cuppeanut butter
Instructions
Grease a 9×9-inch pan or line with parchment paper.
In a saucepan over medium heat, melt the butter. Stir in brown sugar and vanilla until smooth.
Add oats and cook over low heat, stirring frequently, for 2–3 minutes.
Press half the oat mixture into the prepared pan and smooth the top. Set aside the rest.
In a separate saucepan or microwave-safe bowl, melt chocolate chips and peanut butter until smooth.
Pour chocolate mixture over oat layer and spread evenly. Crumble remaining oats over the top and press gently.
Refrigerate for 2–3 hours or until firm. Let sit at room temperature for 10 minutes before slicing and serving.
Notes
Use quick oats for best texture. Add a sprinkle of sea salt on top for an extra flavor pop. Can be made vegan by using plant-based butter and dairy-free chocolate.
