  • 1 cup butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter

Instructions

  • Grease a 9×9-inch pan or line with parchment paper.
  • In a saucepan over medium heat, melt the butter. Stir in brown sugar and vanilla until smooth.
  • Add oats and cook over low heat, stirring frequently, for 2–3 minutes.
  • Press half the oat mixture into the prepared pan and smooth the top. Set aside the rest.
  • In a separate saucepan or microwave-safe bowl, melt chocolate chips and peanut butter until smooth.
  • Pour chocolate mixture over oat layer and spread evenly. Crumble remaining oats over the top and press gently.
  • Refrigerate for 2–3 hours or until firm. Let sit at room temperature for 10 minutes before slicing and serving.

Notes

Use quick oats for best texture. Add a sprinkle of sea salt on top for an extra flavor pop. Can be made vegan by using plant-based butter and dairy-free chocolate.
