Ingredients
Ingredients
1cupRolled Oats
1cupShredded Unsweetened Coconut
1/2cupNatural Peanut Butter
1/2cupHoney or Maple Syrup
1/2cupDark Chocolate Chips
1/4teaspoonSalt
1teaspoonVanilla Extract
Instructions
In a medium saucepan over low heat, combine the peanut butter, honey (or maple syrup), and chocolate chips. Stir frequently until the mixture is completely melted and smooth, which takes about 2 to 3 minutes.
Remove the saucepan from the heat. Quickly stir in the vanilla extract and salt.
Add the rolled oats and shredded coconut. Mix until all the dry ingredients are evenly coated with the chocolate-peanut butter mixture.
Line a baking sheet (or large plate) with parchment paper. Using a spoon or small cookie scoop, drop tablespoon-sized clusters of the mixture onto the prepared sheet.
Let the clusters rest at room temperature for 15 to 20 minutes, or until set. If you’re in a hurry, pop the baking sheet into the fridge for faster setting.
Enjoy immediately, or transfer your clusters to an airtight container for storage.
Notes
These clusters can be stored at room temperature for up to 3 days or in the refrigerator for up to 2 weeks. For longer storage, freeze for up to 2 months.
