Instructions
In a medium mixing bowl, beat the softened cream cheese until smooth. Use a hand mixer or sturdy spoon and scrape down the sides so there are no lumps.
Add in powdered sugar, vanilla extract, and a pinch of salt (if using). Beat again until fully combined and silky. Taste and adjust sweetness if needed.
Stir in 1/2 cup of graham cracker crumbs and mix well until evenly distributed. The mixture should be soft but firm enough to shape.
Chill the mixture in the refrigerator for 30 minutes to firm up. This step makes rolling much easier.
Once firm, scoop and roll the mixture into bite-sized balls using your hands or a small cookie scoop. Aim for about 1 inch in diameter for perfect portion size.
Roll each ball in additional graham cracker crumbs to coat. Press gently so the crumbs adhere.
If desired, press mini chocolate chips or sprinkles into the tops for extra flair. Use festive colors for parties.
