Instructions
1. Butter a 10-inch springform pan. Wrap the outside with heavy-duty foil.
2. Preheat oven to 300°F (150°C).
3. In a large bowl, beat eggs and sour cream until smooth. In another bowl, beat cream cheese and butter until creamy.
4. Combine both mixtures and add sugar, cornstarch, vanilla, lemon juice, and lemon zest. Beat until smooth, about 2 minutes.
5. Pour batter into prepared pan. Place in a large roasting pan and pour hot water halfway up the sides of the springform pan.
6. Bake for 2 hours 15 minutes, until the top is lightly golden and a knife inserted in the center comes out clean.
7. Remove from water bath, unwrap foil, and cool at room temperature for 4 hours.
8. Cover and refrigerate overnight before serving.
Notes
For best results, use room temperature ingredients and avoid overmixing. Chill overnight for optimal flavor and texture.
