  • 5 large eggs room temperature
  • 2 cups sour cream room temperature
  • 4 packages (8 oz) cream cheese room temperature
  • 8 tablespoons unsalted butter room temperature
  • 1.5 cups sugar
  • 2 tablespoons cornstarch
  • 1.5 teaspoons vanilla extract
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon grated lemon zest

Instructions

  • 1. Butter a 10-inch springform pan. Wrap the outside with heavy-duty foil.
  • 2. Preheat oven to 300°F (150°C).
  • 3. In a large bowl, beat eggs and sour cream until smooth. In another bowl, beat cream cheese and butter until creamy.
  • 4. Combine both mixtures and add sugar, cornstarch, vanilla, lemon juice, and lemon zest. Beat until smooth, about 2 minutes.
  • 5. Pour batter into prepared pan. Place in a large roasting pan and pour hot water halfway up the sides of the springform pan.
  • 6. Bake for 2 hours 15 minutes, until the top is lightly golden and a knife inserted in the center comes out clean.
  • 7. Remove from water bath, unwrap foil, and cool at room temperature for 4 hours.
  • 8. Cover and refrigerate overnight before serving.

Notes

For best results, use room temperature ingredients and avoid overmixing. Chill overnight for optimal flavor and texture.
