Instructions
In a medium mixing bowl, combine the creamy peanut butter and honey. Microwave for 20-30 seconds until just warm, then stir together until smooth and fully combined.
Stir in the vanilla extract until evenly mixed.
Add the old-fashioned oats and vanilla protein powder to the bowl. Mix well with a spatula or wooden spoon until everything is evenly coated—no dry pockets!
Fold in the mini chocolate chips, M&M’s, and crushed pretzels. Mix gently but thoroughly to evenly distribute all the fun, colorful bits.
If the mixture feels sticky, place the bowl in the refrigerator for 10-15 minutes to firm up.
Using your hands or a small cookie scoop, roll the dough into 1-inch balls. Place each protein bite on a lined baking sheet or plate.
Once all the bites are rolled, store in an airtight container. Enjoy immediately or chill until ready to serve.
