Instructions
Preheat oven to 375°F and grease a baking dish.
Cook elbow macaroni according to package directions until al dente. Drain and return to pot. Stir in butter until melted.
In a saucepan over medium heat, melt Velveeta with 3/4 cup of milk, stirring until smooth.
Pour the melted cheese over the macaroni. Stir in half of the shredded cheddar and Monterey Jack. Add salt and pepper to taste.
In a small bowl, whisk the remaining 3/4 cup milk with the beaten eggs. Pour into the pasta and mix until well combined.
Transfer mixture to the prepared baking dish. Top with the remaining shredded cheeses.
Bake for 25–30 minutes, until bubbly and golden on top.
Notes
Add a crunchy topping with breadcrumbs or crushed crackers before baking. Customize with garlic powder, paprika, or hot sauce for extra flavor.
