  • 16 oz elbow macaroni
  • 1 lb Velveeta cheese, cubed
  • 1.5 cups milk, divided
  • 3 tablespoons butter
  • 8 oz mild cheddar cheese, shredded, divided
  • 8 oz Monterey Jack cheese, shredded, divided
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 large eggs, lightly beaten

Instructions

  • Preheat oven to 375°F and grease a baking dish.
  • Cook elbow macaroni according to package directions until al dente. Drain and return to pot. Stir in butter until melted.
  • In a saucepan over medium heat, melt Velveeta with 3/4 cup of milk, stirring until smooth.
  • Pour the melted cheese over the macaroni. Stir in half of the shredded cheddar and Monterey Jack. Add salt and pepper to taste.
  • In a small bowl, whisk the remaining 3/4 cup milk with the beaten eggs. Pour into the pasta and mix until well combined.
  • Transfer mixture to the prepared baking dish. Top with the remaining shredded cheeses.
  • Bake for 25–30 minutes, until bubbly and golden on top.

Notes

Add a crunchy topping with breadcrumbs or crushed crackers before baking. Customize with garlic powder, paprika, or hot sauce for extra flavor.
