Instructions
Preheat the oven to 325°F (160°C).
In a bowl, mix graham cracker crumbs, 2 tablespoons of sugar, and melted butter until combined.
Press the mixture into the bottoms of muffin tins lined with cupcake liners.
In a separate bowl, beat the cream cheese until smooth. Add heavy cream, powdered sugar, vanilla extract, and egg yolks, and mix until fully blended.
Pour the cheesecake batter over the crusts in the muffin tins.
Bake for 20-25 minutes or until set but still slightly jiggly in the center.
Remove from the oven and let cool, then refrigerate for at least 4 hours.
Before serving, sprinkle a thin layer of granulated sugar on top and use a kitchen torch to caramelize the sugar until golden brown.
