Ingredients

Crust

  • 1 cup Graham cracker crumbs
  • 2 tablespoons Granulated sugar
  • 4 tablespoons Melted butter

Filling

  • 16 oz Cream cheese
  • 1 cup Heavy cream
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 2 large Egg yolks

Topping

  • 2 tablespoons Granulated sugar for topping

Instructions

  • Preheat the oven to 325°F (160°C).
  • In a bowl, mix graham cracker crumbs, 2 tablespoons of sugar, and melted butter until combined.
  • Press the mixture into the bottoms of muffin tins lined with cupcake liners.
  • In a separate bowl, beat the cream cheese until smooth. Add heavy cream, powdered sugar, vanilla extract, and egg yolks, and mix until fully blended.
  • Pour the cheesecake batter over the crusts in the muffin tins.
  • Bake for 20-25 minutes or until set but still slightly jiggly in the center.
  • Remove from the oven and let cool, then refrigerate for at least 4 hours.
  • Before serving, sprinkle a thin layer of granulated sugar on top and use a kitchen torch to caramelize the sugar until golden brown.
  • Let cool slightly and enjoy!

Notes

For best results, allow cheesecakes to chill for at least 4 hours before caramelizing the sugar topping.
