Crust
1.5cupsGraham cracker crumbs
0.5cupsSalted butter, melted

Filling
1can (14 ounces)Sweetened condensed milk
1cupSweetened flaked coconut, divided1/3 cup toasted
0.25cupsFresh lemon juice
1can (20 ounces)Crushed pineapple, well drained
1can (11 ounces)Mandarin oranges, well drained
1cupChopped pecans, dividedReserve 1–2 tablespoons for garnish
1container (8 ounces)Cool Whip, thawed
to tasteMaraschino cherries for garnish
Instructions
Preheat your oven to 325°F (163°C).
In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Stir well until the mixture is evenly moistened.
Press the crumb mixture firmly into the bottom and up the sides of a 9-inch deep-dish pie plate to form an even crust.
Bake the crust for 10 minutes, then remove from oven and let it cool completely.
While the crust is baking, spread 1/3 cup of the flaked coconut on a rimmed baking sheet and toast it in the oven for 4–6 minutes, stirring once halfway through, until golden brown. Allow to cool.
In a large bowl, whisk together the sweetened condensed milk and fresh lemon juice until smooth and slightly thickened.
Gently fold in the drained crushed pineapple, drained mandarin oranges, and chopped pecans, reserving 1–2 tablespoons of pecans for garnish.
Carefully fold the Cool Whip and the remaining untoasted coconut into the fruit and nut mixture until fully combined.
Spoon the filling evenly into the cooled graham cracker crust, smoothing the top with a spatula.
Sprinkle the toasted coconut and reserved chopped pecans evenly over the top.
Refrigerate the pie for at least 4 hours, or until set and firm.
Just before serving, garnish with maraschino cherries for a bright finishing touch.
