  • 3 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup cheddar cheese, shredded divided
  • 1 cup mozzarella cheese, shredded divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 sleeve Ritz crackers, crushed
  • 4 tablespoons butter, melted
  • Fresh parsley, chopped for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, cream cheese, sour cream, mayonnaise, half of the cheddar cheese, half of the mozzarella cheese, garlic powder, onion powder, and black pepper. Mix until everything is well combined.
  • Spread the chicken mixture into a greased 9x13 inch baking dish.
  • In a small bowl, mix the crushed Ritz crackers with the melted butter.
  • Sprinkle the remaining cheddar and mozzarella cheese over the chicken mixture.
  • Top with the buttered cracker crumbs for that extra crunch.
  • Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the casserole is bubbling.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, you can add cooked veggies like broccoli or peas to the mixture. Make sure your cream cheese is fully softened to blend well with the other ingredients. Use leftover rotisserie chicken to save on prep time.
