Ingredients

Ingredients

  • 1 pound medium shrimp, raw or cooked
  • 1 teaspoon kosher salt
  • 1 cup chopped red onion
  • 1 cup peeled, diced cucumber
  • 1/2 cup chopped celery
  • 1 jalapeño, minced

Instructions

  • If using raw shrimp, bring a pot of salted water to a boil. Add shrimp and cook for 2-3 minutes until pink. Drain and let cool. If using cooked shrimp, chop into bite-sized pieces.
  • In a large bowl, combine chopped red onion, diced cucumber, chopped celery, and minced jalapeño.
  • Add the shrimp to the veggie mixture and stir well. Cover and refrigerate for at least 1 hour to enhance flavors.
  • Serve chilled in individual bowls, optionally topped with sliced avocado.

Notes

For best flavor, let the shrimp cocktail chill for at least an hour. Pair with tortilla chips, a green salad, or a refreshing drink like a margarita.
