Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts

Oil and Spices

  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Cheese Sauce

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green chiles

Garnishes

  • Chopped cilantro for garnish
  • Sliced jalapeños for garnish
  • Diced tomatoes for garnish

Instructions

  • Season chicken breasts with chili powder, cumin, garlic powder, salt, and pepper.
  • Heat olive oil in a skillet over medium heat. Cook chicken until browned and fully cooked, about 7-8 minutes per side. Remove and set aside.
  • In the same skillet, melt butter over medium heat. Whisk in flour until smooth.
  • Gradually add milk, whisking continuously until the sauce thickens.
  • Reduce heat to low and stir in cheddar cheese and green chiles. Mix until the cheese melts and the sauce is smooth.
  • Season with salt and pepper to taste.
  • Place chicken on a plate, pour cheese sauce over the top, and garnish with cilantro, jalapeños, and diced tomatoes.

Notes

For extra spice, add sliced jalapeños to the cheese sauce. Try using different cheeses like Monterey Jack or pepper jack for a flavor twist.
