Grated Parmigiano Reggiano (for serving)

Instructions
Heat olive oil in a large skillet over medium heat.
Add garlic and onion; sauté until softened, about 3 minutes.
Add red pepper flakes (if using), diced tomatoes, oregano, basil, salt, and pepper. Simmer for 5 minutes.
Add cannellini beans and chopped escarole. Stir to combine.
Pour in vegetable broth or water and mix well.
Cover and simmer for 10 minutes, allowing greens to wilt and flavors to meld.
Serve hot, topped with grated Parmigiano Reggiano. Enjoy with crusty bread or cooked pasta if desired.
Notes
Use chickpeas or kidney beans as a substitute. Add carrots or zucchini with the onions for extra heartiness. Make it vegan by omitting the cheese.
