Ingredients
1cupFresh spinach, chopped
1/2cupFeta cheese, crumbled
1/2cupParmesan cheese, finely grated
1/2cupMozzarella cheese, shredded
1teaspoonOlive oil
1/2teaspoonGarlic powder
1/2teaspoonDried oregano
to tasteSalt and pepper
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the chopped spinach, crumbled feta, grated parmesan, and shredded mozzarella. Stir in the olive oil, garlic powder, dried oregano, a pinch of salt, and some black pepper. Mix until everything is evenly coated and combined.
Using a tablespoon or a small scoop, portion the mixture onto the prepared baking sheet, leaving about an inch between each to allow for spreading.
Gently press each mound down with the back of a spoon to form flat circles (about 2-inches in diameter).
Bake in the preheated oven for 10-12 minutes, or until edges are golden and the cheese is bubbly and starting to crisp up.
Remove tray from the oven and let crisps cool on the pan for a few minutes to finish setting up. Then transfer to a plate and enjoy warm or at room temperature.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, lay out on a baking sheet and pop into a preheated oven (350°F/175°C) for 5-7 minutes.
