  • 1 cup Fresh spinach, chopped
  • 1/2 cup Feta cheese, crumbled
  • 1/2 cup Parmesan cheese, finely grated
  • 1/2 cup Mozzarella cheese, shredded
  • 1 teaspoon Olive oil
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Dried oregano
  • to taste Salt and pepper

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the chopped spinach, crumbled feta, grated parmesan, and shredded mozzarella. Stir in the olive oil, garlic powder, dried oregano, a pinch of salt, and some black pepper. Mix until everything is evenly coated and combined.
  • Using a tablespoon or a small scoop, portion the mixture onto the prepared baking sheet, leaving about an inch between each to allow for spreading.
  • Gently press each mound down with the back of a spoon to form flat circles (about 2-inches in diameter).
  • Bake in the preheated oven for 10-12 minutes, or until edges are golden and the cheese is bubbly and starting to crisp up.
  • Remove tray from the oven and let crisps cool on the pan for a few minutes to finish setting up. Then transfer to a plate and enjoy warm or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, lay out on a baking sheet and pop into a preheated oven (350°F/175°C) for 5-7 minutes.
