Instructions
Open and drain canned salmon. Remove any bones or skin, then flake into a bowl.
In a skillet over medium heat, sauté spinach for 2 minutes until wilted. Let cool and squeeze out excess moisture.
In a large mixing bowl, combine flaked salmon, spinach, red onion, garlic, feta, breadcrumbs, eggs, parsley, dill (if using), lemon juice, lemon zest, oregano, salt, and pepper. Mix well.
Form mixture into 6–8 patties, about 3 inches wide.
Heat olive oil in a large pan over medium heat. Cook patties 3–4 minutes per side, or until golden and crispy.
Transfer to a paper towel-lined plate. Serve hot with lemon wedges and Tzatziki sauce.
Notes
Use fresh cooked salmon if preferred. Make the mixture ahead of time and store in the fridge until ready to cook. Patties freeze well—just thaw before cooking. Excellent with salad, couscous, or roasted veggies.
