  • 2 cups mashed potatoes leftover or freshly made
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons chopped chives optional
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs optional for added crunch

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray it with non-stick cooking spray.
  • In a large mixing bowl, stir together mashed potatoes, cheddar, Parmesan, egg, and chives. Season with salt and pepper to taste.
  • If using, mix in breadcrumbs or roll each puff in breadcrumbs before baking for extra texture.
  • Use a tablespoon or small scoop to form mixture into balls or mounds. Place them evenly spaced on the prepared baking sheet.
  • Bake for 14–16 minutes, or until the puffs are golden on top and lightly crisp on the outside.
  • Let them cool slightly before serving—they’ll be piping hot inside!

Notes

These puffs can be customized with different cheeses or add-ins like bacon or jalapeños. Store leftovers in an airtight container for up to 3 days.
