Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray it with non-stick cooking spray.
In a large mixing bowl, stir together mashed potatoes, cheddar, Parmesan, egg, and chives. Season with salt and pepper to taste.
If using, mix in breadcrumbs or roll each puff in breadcrumbs before baking for extra texture.
Use a tablespoon or small scoop to form mixture into balls or mounds. Place them evenly spaced on the prepared baking sheet.
Bake for 14–16 minutes, or until the puffs are golden on top and lightly crisp on the outside.
Let them cool slightly before serving—they’ll be piping hot inside!
Notes
These puffs can be customized with different cheeses or add-ins like bacon or jalapeños. Store leftovers in an airtight container for up to 3 days.
