Instructions
Step 1: Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning on both sides.
Step 2: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
Step 3: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Stir in the sun-dried tomatoes and cook for another minute. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Step 4: Reduce the heat to low and stir in the heavy cream. Let the sauce simmer for a few minutes until it thickens slightly. Stir in the Parmesan cheese until melted and the sauce is smooth. If you like a little spice, add the red pepper flakes at this point.
Step 5: While the sauce is simmering, cook the pasta according to the package instructions until al dente. Drain and set aside.
Step 6: Slice the cooked chicken and add it back to the skillet with the sauce. Toss the cooked pasta in the sauce until well coated. Serve hot, garnished with fresh basil or parsley.
Notes
Use fresh ingredients for better flavor. Don’t overcook the pasta; it should be al dente. Adjust the spice level with red pepper flakes to suit your taste.
