Instructions

  • Preheat your oven to 325°F (160°C).
  • In a large mixing bowl, combine the softened cream cheese and sugar. Use a hand mixer or a whisk to blend until creamy and smooth, ensuring no lumps remain.
  • Add the key lime juice, mango puree, and vanilla extract to the cream cheese mixture. Beat until fully combined.
  • One by one, add the large eggs, mixing well after each addition until the mixture is smooth and well-blended.
  • Carefully pour the cheesecake mixture into the pre-made graham cracker crust, smoothing the top with a spatula.
  • Place your cheesecake in the oven and bake for about 45-50 minutes, or until the edges are lightly browned and the center is set but slightly jiggly.
  • Once baked, allow the cheesecake to cool at room temperature before refrigerating it for at least four hours (or overnight) to set fully.
