Instructions
Preheat your oven to 350°F (175°C).
Melt the butter in a small saucepan over low heat or in the microwave. Set aside to cool slightly.
In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until fully blended.
In another bowl, mix the milk, lemon juice, and vanilla extract until well-combined.
Pour the melted butter into the flour mixture, followed by the milk-lemon mixture. Stir gently until just combined.
Pour the batter into a greased baking dish and bake for 40-45 minutes until the top is golden brown.
Let the cobbler cool for about 10 minutes before serving. Best enjoyed warm with ice cream or whipped cream.
Notes
Use fresh lemons for the best flavor. You can also add zest for extra flavor or incorporate berries for a twist!
