  • 1/2 pound Bacon, chopped
  • 1 pound Ground beef
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 4 large Eggs
  • 1/2 cup Heavy cream
  • 1 tablespoon Tomato paste
  • 1 tablespoon Mustard
  • 2 cups Shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish.
  • In a skillet, cook the chopped bacon until crisp. Remove bacon and set aside, keeping the bacon fat in the skillet.
  • Add ground beef, diced onion, and minced garlic to the skillet. Cook until beef is browned and drain excess fat if needed.
  • In a bowl, whisk together eggs, heavy cream, tomato paste, and mustard. Season with salt and pepper.
  • Spread the beef mixture in the greased baking dish. Pour the egg mixture over it, then top with bacon and cheddar cheese.
  • Bake for about 30 minutes or until the center is set and cheese is golden brown.

Notes

Serve hot with a fresh salad or steamed veggies. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
