  • 1 lb Sirloin Steak
  • 1 tsp Chili Powder
  • 1/2 tsp Paprika
  • 1/4 tsp Cumin
  • 1/4 tsp Oregano
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Salt
  • 4 large Flour Tortillas
  • 2 cups Taco Blend Shredded Cheese
  • 1/2 cup Cherry Tomatoes (sliced)
  • 1/2 cup Fire-Roasted Corn (drained)
  • 1/2 cup Black Beans (rinsed & drained)
  • 1/2 cup Avocado (diced)
  • Lime Juice & Chopped Cilantro (for garnish)
  • Cooking Oil (for skillet)

Instructions

  • Preheat oven to 425°F (220°C).
  • In a small bowl, mix chili powder, paprika, cumin, oregano, garlic powder, onion powder, and salt.
  • Rub seasoning mix onto the steak. Heat a skillet with oil and sear steak for 4-5 minutes per side. Let rest for 5 minutes, then slice into bite-sized pieces.
  • On a baking sheet, place a tortilla, sprinkle cheese, add steak, black beans, corn, tomatoes, and avocado. Top with more cheese and another tortilla.
  • Bake for 8-10 minutes until golden and crispy.
  • Garnish with cilantro and lime juice. Slice and serve hot!

Notes

For a spicier kick, add sliced jalapeños. Store leftovers in an airtight container for up to 3 days. Reheat in a skillet or oven for crispiness. Freeze individually wrapped quesadillas for up to 2 months.
