Instructions
Preheat oven to 425°F (220°C).
In a small bowl, mix chili powder, paprika, cumin, oregano, garlic powder, onion powder, and salt.
Rub seasoning mix onto the steak. Heat a skillet with oil and sear steak for 4-5 minutes per side. Let rest for 5 minutes, then slice into bite-sized pieces.
On a baking sheet, place a tortilla, sprinkle cheese, add steak, black beans, corn, tomatoes, and avocado. Top with more cheese and another tortilla.
Bake for 8-10 minutes until golden and crispy.
Garnish with cilantro and lime juice. Slice and serve hot!

For a spicier kick, add sliced jalapeños. Store leftovers in an airtight container for up to 3 days. Reheat in a skillet or oven for crispiness. Freeze individually wrapped quesadillas for up to 2 months.
