Ingredients

Fries

  • 4 medium Russet Potatoes Cut into strips for frying.
  • 2 tablespoons Olive Oil For seasoning fries.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.

Cheese Layer

  • 1 cup Sharp Cheddar Cheese Shredded.
  • 1 cup Mozzarella Cheese Shredded.

Protein Toppings

  • 1 cup Crispy Bacon Bits Cooked and crumbled.
  • 1 cup Chili For chili cheese fries.

Final Toppings

  • 1 cup Green Onions Chopped.
  • 1/2 cup Sour Cream For serving.
  • 1/2 cup Guacamole For serving.

Instructions

  • Preheat the oven to 425°F (220°C).
  • Cut the russet potatoes into strips and soak them in water for 30 minutes to remove excess starch.
  • Drain and pat the potatoes dry. Toss them with olive oil, salt, and pepper.
  • Spread the fries in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  • Remove fries from the oven and layer with sharp cheddar and mozzarella cheese. Return to the oven until the cheese is melted.
  • Top with crispy bacon bits or chili, then finish with green onions, sour cream, and guacamole.
