Instructions
Preheat the oven to 425°F (220°C).
Cut the russet potatoes into strips and soak them in water for 30 minutes to remove excess starch.
Drain and pat the potatoes dry. Toss them with olive oil, salt, and pepper.
Spread the fries in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.
Remove fries from the oven and layer with sharp cheddar and mozzarella cheese. Return to the oven until the cheese is melted.
Top with crispy bacon bits or chili, then finish with green onions, sour cream, and guacamole.
