Ingredients

Brownies

  • 1/2 cup unsalted butter, softened
  • 3/4 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons lemon zest (from about 2 lemons)
  • 2 tablespoons fresh lemon juice
  • 3/4 cup granulated sugar
  • 1/4 teaspoon sea salt

Glaze

  • 4 tablespoons lemon juice
  • 8 teaspoons lemon zest
  • 1 cup icing sugar (powdered sugar), sifted

Instructions

  • Preheat oven to 350°F. Grease an 8x8-inch baking dish with butter.
  • In a stand mixer, beat together flour, sugar, salt, and softened butter until combined.
  • In a separate bowl, whisk eggs, lemon zest, and lemon juice. Add to flour mixture and beat for 2 minutes until smooth.
  • Pour batter into baking dish and bake for 23–25 minutes, until edges are golden and center is just set.
  • Let brownies cool completely in the pan.
  • In a small bowl, whisk together powdered sugar, lemon juice, and zest until smooth.
  • Spread glaze over cooled brownies. Let glaze set before slicing into squares.
  • Serve and enjoy!

Notes

Use freshly squeezed lemon juice and zest for the best flavor. Let brownies cool before glazing. Optional: Add white chocolate chips or fresh blueberries for a fun twist!
