  • 2 tbsp Lemon Juice
  • 1/4 cup Honey or Maple Syrup Use maple syrup for a vegan version.
  • 2 tbsp Coconut Oil, melted
  • 1/2 tsp Vanilla Extract

Instructions

  • Combine Dry Ingredients: In a bowl, mix almond flour, protein powder, and poppy seeds.
  • Add Lemon: Stir in lemon zest and juice.
  • Mix Wet Ingredients: Add honey or maple syrup, melted coconut oil, and vanilla extract. Stir until a dough forms.
  • Form Balls: Roll into 1-inch balls and place on a parchment-lined tray.
  • Chill: Refrigerate for 30 minutes to firm up before serving.

Notes

Use maple syrup for a vegan version. Add extra lemon juice or coconut oil if mixture is too dry. Store in fridge up to 1 week or freeze for 1 month.
