  • 2.5 cups Quick Oats
  • 3/4 cup Granulated Sugar
  • 1/2 cup Unsalted Butter cut into pieces
  • 1/4 cup Milk whole or 2% preferred, room temperature
  • 1/4 teaspoon Salt
  • 1 tablespoon Lemon Zest optional, finely grated

Instructions

  • Prepare a sheet pan lined with wax paper or parchment paper so you can drop and set the cookies without sticking. Set aside.
  • In a medium saucepan over medium heat, combine the granulated sugar, unsalted butter, and milk.
  • Stir constantly with a heatproof spatula or wooden spoon until the butter melts and the sugar dissolves.
  • Bring the mixture to a gentle boil. Once boiling, continue to boil for 1 minute while stirring.
  • Remove the saucepan from the heat immediately after the minute is up.
  • Stir in the quick oats, salt, and lemon zest (if using). Mix until all oats are evenly coated.
  • Use a tablespoon or small cookie scoop to drop rounded spoonfuls of the mixture onto the prepared wax paper.
  • Let the cookies cool and set at room temperature for about 15–30 minutes until firm.
  • Once set, transfer cookies to a serving plate and enjoy your refreshing lemony no-bake cookies.

Notes

Store cooled cookies in an airtight container at room temperature for up to 3 days. If your kitchen is warm, keep them in the refrigerator for up to 7 days.
