Lemon Garlic Butter Chicken Bites with Savory Parmesan Linguine

Ingredients

Chicken

  • 1 lb chicken breast, cut into bite-sized pieces

Butter and Oil

  • 2 tbsp unsalted butter
  • 2 tbsp olive oil

Garlic and Seasonings

  • 4 cloves garlic, minced
  • 1 unit juice of 1 lemon
  • 1 tsp lemon zest
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped

Pasta

  • 8 oz linguine pasta

Toppings

  • to taste unit Parmesan cheese for serving

Instructions

  • Cut the chicken breast into bite-sized pieces and set aside.
  • Cook the linguine in a pot of salted boiling water according to package instructions. Drain and set aside.
  • In a large skillet, melt butter and olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  • Add the chicken pieces to the skillet and season with lemon juice, lemon zest, Italian seasoning, salt, black pepper, and red pepper flakes.
  • Cook the chicken for 5-7 minutes, stirring occasionally, until browned and cooked through.
  • Add the cooked linguine to the skillet and toss to coat in the sauce.
  • Stir in fresh parsley and remove from heat.
  • Serve hot, topped with Parmesan cheese. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or microwave before serving. To freeze, store the chicken separately and cook fresh pasta when ready to eat.
